My story began in the remote opal fields of South Australia. I was born and raised in Andamooka and Coober Pedy, where my childhood backyard wasn’t a suburban street. It was thousands of square kilometres of ancient desert, endless horizons and some of Australia’s most rugged and spectacular landscapes.
Growing up as the son of an opal miner and dealer, I was surrounded by the unique characters, landscapes and stories of the Outback. While opals were part of my upbringing, my own passion took me in a different direction, towards hospitality, food and creating memorable experiences for people.
That passion led me to study at the Swiss Hotel Association International College of Hotel Management, where I graduated with an Advanced Diploma in International Hotel Management, as well as completing my Le Cordon Bleu Diplome Culinaire d’Hotelier.
From there, I built a career in luxury hospitality around Australia and the world, working with some of the world’s leading hotel groups including Hilton, Marriott and Oberoi. These years gave me the opportunity to work alongside talented hospitality professionals, learn from some of the world’s best, and develop an understanding of what creates truly exceptional experiences.
My journey eventually took me across the world to Ketchikan, Alaska, where my brother and I purchased and operated two retail stores in one of the world’s busiest cruise ship ports.
After returning home to South Australia to raise my family, I brought together my international hospitality experience with my passion for local produce, food and exceptional service. Working with SkyCity Adelaide and Eos by SkyCity, I had the privilege of collaborating with some of Australia’s finest chefs, producers and artisans, sourcing ingredients and creating experiences for special events featuring internationally recognised chefs.
But despite the years spent travelling the world and working in luxury hotels, the Outback always called me home.
I realised that some of the most memorable experiences weren’t found inside five-star hotels, they were found around a campfire beneath millions of stars, sharing stories with locals, discovering ancient landscapes and experiencing the true character of Australia.
That realisation led me to create Australian Outback Escapes.
Today, I combine my lifelong connection to the Outback with my background in luxury hospitality to create journeys that are authentic, immersive and unforgettable. My goal is simple: to share the Australia I know and love: the landscapes, stories, people and flavours, and create experiences that feel genuine, personal and truly unforgettable.
